Great program for tracking time spent (and thus, money earned) on projects. As far as I know, there is no program quite like it around (for free or paid).
This is a simple, but effective program for tracking hours and creating simple invoices. My favourite feature is the iCal integration, which means that I can enter my hours on task easily from iCal or Google Calendar (via BusySync).

The way this tracks time really clicked for me, unlike all the other specialized time tracking apps I tried. Your time is divided into projects, each of which has its own window (which you may show as many or as few of as you desire). Each project window breaks down your time into line items, each of which may have a different starting time, duration, category, rate, and notes. At any time you may start/pause the timer for one or more line items (to keep track of the time you're putting into it). When you return from stepping away from your computer, OfficeTime asks you where that AFK time should go, if anywhere. It all just makes so much sense to me.
But what utterly kills this program for me is the lack of Cocoa keyboard bindings, multiple-undo, and all the other modern UI conveniences we've come to rely on. Sigh.
